Hotel Cook / All-Rounder
- We require an energetic, creative, professional, hardworking cook / hotel all-rounder with a passion for their job and experience in catering for large numbers.
- Proven ability to work unsupervised within set timeframes will be key to succeed in this role.
- The position is required for a May start with a requirement of a 4 month seasonal contract.
- People with a love for the outback, who are ready for a challenge and can work successfully with others we look forward to hearing from you.
Applicants should be able to demonstrate the following at the time of applying;
- Preparing the kitchen before meal service – this involves working through a task list to ensure the kitchen is ready for meal service.
- Preparation and service of great pub food from a set menu and buffet premium quality meals for a high volume of customers.
- Garnishing and presenting every meal with pride and care regardless of how busy the kitchen is
- Can positively respond to pressure and deadlines. Note depending on the time of the season meal covers will vary from 30-150 on any given service. With orders being taken from menu.
- Ability to work unsupervised and consistently meet set time frames.
- Undertake food preparation while maintaining required stock levels. Due to hotel location this requires the ability to think a couple of days ahead – forward planning is key.
- Assist Management in creating new menus that meet budgets.
- Ability to be creative and resourceful by making the most out of what ingredients we have on site while minimising or ideally eliminating wastage.
- Assisting management with food ordering in line with hotel policy and procedure.
- Maintaining a clean and tidy working environment to consistently meet the standards of Health Department
- Recording daily temperature checks in line with legislation.
- Work as a team and helping others where required – note as a small team in the Outback this includes washing dishes.
- Answering the phone & taking messages/accommodation reservations as required.
- Be willing to live and work in a remote destination while respecting the local culture
- Required to be flexible with roster changes and hours worked depending on the needs of the business throughout the four month contract.
- Work a 6 day per week rotational roster
- Report to Hotel manager & able to take direction easily
Essential and Desirable Certificates
- SITXFSA101, Use hygienic practices for food safety
- SITXFSA201 Participate in safe food handling practices
- Cooks SIT30816 Cert111 in commercial cookery
Accommodation and meals are provided for $120 per week that is directly deducted from your weekly wage.
Flights to Innamincka are direct from Adelaide to Moomba and we would fly the successful applicants out and return flights to Adelaide at end of contract.

Hotel All-Rounder
Those with previous hospitality and remote area experience would be at an advantage. The position is required to start the beginning of May with a requirement of completing 4 -5 month contract.
This position will include key responsibilities such as:
- Undertaking bar work – experience with H&L would be an advantage
- Meal running – this can vary from 30 covers – 150 covers.
- Housekeeping – an eye for detail and maintaining stamina is essential and strict timeframes for next guest check ins.
- Undertaking reception work – knowledge of little hotelier would be an advantage
- Undertaking reservation bookings including responding to requests from larger tour groups
- Promoting regional and local tours to individual tourists and larger groups
- Having excellent phone manners and accurately recording messages
- Building a rapport with existing and new clients both on the phone, via email and face to face
- Assisting in basic kitchen duties including washing dishes and cleaning at the end of service.
- Any other duties as required by management.
Essential qualifications required at the time of applying include:
- A current South Australian RSA SITHFAB002 certificate is required or equivalent
- Certificate for kitchen SITXFSA101 Use Hygiene practices for food safety.
- Current Senior First Aid Certificate is desirable.
Applicants must have the ability to work in a close team environment in a remote location and always have a positive can do attitude.
The need to be flexible by learning and working in all parts of the business when it’s required is essential to your success in the role and the team overall.
At the Innamincka Hotel everyone from the Manager down pitches in to make sure the guest has the best time possible and everything runs as smoothly as it can as a team.

- Consistently work a 6 day per week rotating roster.
- Report to Hotel manager or Hospitality Coach and be able to take direction easily.

Accommodation and 3 meals per day are provided for $120 per week that is directly deducted from your weekly wage. Accommodation may be shared.
